NO-BAKE PEANUT BUTTER COOKIES

1 cup granulated white sugar----1/2 cup brown sugar----1 cup white Karo corn syrup----1/2 tsp. salt----2 tsp. pure vanilla----12 oz jar peanut butter (smooth or chunky)--5 heaping cups Special K or similar cereal:

1.Measure cereal into a large bowl and set aside.

2.In a medium saucepan, combine white and brown sugar, stirring well. Slowly bring to a boil (not a hard boil).

3.Remove from heat. Stir in salt, vanilla and peanut butter.

4.Mix well and pour over the cereal in bowl.

5.Drop by tablespoons onto wax or parchment paper or onto a greased cookie sheet and cut into squares.

6.Variations: (Add to cereal bowl) toasted, flaked coconut, mini-marshmallows, chocolate or peanut butter bits, chopped peanuts, cashews, Macadamia or other nuts. Rice Crispies, Cocoa Puffs, Puffed Wheat or Rice can be used for all or part of the cereal.
